Ā½ cup toasted pecans
1 Ā½ cups oat flour
1 egg
1-2 ripe bananas
Ā¼ cup coconut sugar
Ā¼ raw sugar
Ā½ cup greek yogurt
Ā½ cup semi-sweet chocolate chips
Ā¼ cup chia seeds
2tb melted butter
1tsp baking powder
Ā½ tsp cinnamon
Ā¼ tsp salt
Preheat your oven to 350. Toast your pecans until fragrant and crispy (about 3 minutes in a pan over medium heat)
In a medium size mixing bowl, combine your wet ingredients first. Egg, sugar, melted butter, mashed banana, and yogurt.

Now add in your dry ingredients. Oat flour, baking soda, salt, chia seeds, toasted pecans,
and chocolate chips.

Combine everything together and divy the mixture out into 12 paper-lined muffin tins. Bake for 10 minutes at 350, then turn the oven up to 400 and bake for another 10 minutes (or until the tops start to turn golden and a toothpick inserted comes out clean).

Cool for 10 minutes and then serve. These are best eaten warmed up with a pat of butter. Keep in a dry container in the fridge for up to a week. Each oatmeal cup has approximately 218 calories.
