½ cup toasted pecans
1 ½ cups oat flour
1 egg
1-2 ripe bananas
¼ cup coconut sugar
¼ raw sugar
½ cup greek yogurt
½ cup semi-sweet chocolate chips
¼ cup chia seeds
2tb melted butter
1tsp baking powder
½ tsp cinnamon
¼ tsp salt
Preheat your oven to 350. Toast your pecans until fragrant and crispy (about 3 minutes in a pan over medium heat)
In a medium size mixing bowl, combine your wet ingredients first. Egg, sugar, melted butter, mashed banana, and yogurt.
Now add in your dry ingredients. Oat flour, baking soda, salt, chia seeds, toasted pecans,
and chocolate chips.
Combine everything together and divy the mixture out into 12 paper-lined muffin tins. Bake for 10 minutes at 350, then turn the oven up to 400 and bake for another 10 minutes (or until the tops start to turn golden and a toothpick inserted comes out clean).
Cool for 10 minutes and then serve. These are best eaten warmed up with a pat of butter. Keep in a dry container in the fridge for up to a week. Each oatmeal cup has approximately 218 calories.
These oatmeal cups are such a great way to start the day! They are super hardy with nuts and chia seeds to help keep you full. Chocolate chips make them extra tasty but feel free to play around with this recipe to make it your own!
You can substitute with fruit like blueberries or raspberries or change the toasted pecans to walnuts. Add a few tablespoons of cocoa powder to make it more dessert-like, or add some pumpkin puree (bring on the pumpkin spice!) for a fall treat. It’s completely up to you!
